Whole pigs are placed on the rack and the lid is closed and not opened again until the meat is ready.

There is no need to turn the hog. Load the unit up with the specified amount of charcoal, close the lid and don't open it until the meat is done.
Our pig roasters are designed to provide even heat due to its 3/16 steel construction and stainless steel cooking grate. Temperatures are easily managed with 2 side vents on the firebox and 2 vents on the lid.
