When going for that amazing smoke ring and flavor, your meat must be as cool as you are. As the temperature rises, the amount of smoke the meat takes is reduced. Meat ceases to accept smoke at a temp of 145. Start cool, cook low and slow, and be patient. Click for more BBQ TIPS.
